The Peruvian Sierra Criollo is a multi-purpose breed and use depends on location:
• draught (Ancash region)
• milk and beef (Andahuaylas province, Apurímac department)
• beef and cheesemaking (Ayacucho department)
• beef and draught (Cuzco region)
In all of these areas, morphometric and genetic characterization is being collected. Particular attention is being paid to milk proteins, which could then lead to the development of a PDO system for local cheeses.
