The Horizontal Type Tool and Vertical Type Tool create vector-based type which can be easily re-sized for the web (see below):

For a live preview, click on the text layer you want to change in the Layers Palette and make certain the Text Tool is also active. (Or, just Double-Click the text layer you want to change in the Layers Palette.)
Click the color square in the Options Bar to open the Color Dialog Window (see below):

While clicking in the Color Dialog Window you will see the text color change in your image. Click OK when you’ve chosen your color.
Click inside the font family box (see below) to highlight the current text and use your Arrow Keys to see the fonts previewed in your image. (You can also start typing the font name you want and it will fill itself in rather than scrolling to find it each time.)

You can have different colors and font choices on the same layer.
Click inside your image with the Text Tool on a text layer you have already made and just highlight the word(s) or letter(s) you want to change, then click Command-H (⌘H) to get rid of the highlighting and the bounding box.
You can then preview another color and/or font choice as detailed above. When finished with that layer, click the check box (see below) in the upper Options Bar to save your final choice(s).
