Open Pages and choose a Blank Template.

Select the typeface, point size, borders, etc to what you would like the page to be as your default page whenever you open Pages up.

Then choose File - Save As Template... and name your default template.
(I named mine “default” because I just reek of originality sometimes. yeah – right)

Then go to Preferences - For New Documents: - Use template:

Click the Choose... button and select the new template you just made.

Now every time you open Pages it will use that template for your opening document. Tah-Dah!
