The Scottish Highland, slow-growing and slow-maturing, is a pure beef breed.
The Scottish Highland, insulated by its long shaggy coat, excels in cold regions and fattens best outdoors (even on moorland and poor pasture). When finished on grass-fed systems, they produce beef with a higher level of beneficial unsaturated fats.
Scottish Highland coat colors include:
• black
• dun/brindle
• red-brown (usually)
• yellow
• very pale (silver)
